Crust:
3/4 c. flour
1/2 c. quick cooking oats
1/2 c. chopped pecans
2 T. sugar
1/8 t. salt
1/2 c. butter or margarine, melted

Filling:
3/4 c. sugar
2 T. cornstarch
1 c. water
2 T. light corn syrup
2 T. strawberry gelatin powder
1 quart fresh strawberries (approximately 4 c.), cleaned and hulled

Directions:
Directions:
In a bowl, combine the flour, oats, pecans, sugar and salt; stir in the butter until blended. Press onto bottom and up the sides of a 9 inch pie plate. Bake at 400º for 12 - 15 minutes or until lightly browned. Cool on a wire rack. Meanwhile, combine sugar and cornstarch in a saucepan. Gradually add water and corn syrup; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in gelatin until dissolved. Cool to room temperature. Arrange berries in the crust. Carefully pour gelatin mixture over berries. Refrigerate for 2 hours or until set. Serve with whip cream if desired.

I've used a prepared graham cracker crust instead and is good too. But this pecan crust doesn't break as easily or get as soggy as a bought pre-made graham cracker crust does.

The gelatin mixture is MUCH better than the prepared gelatin you can buy for strawberry pie at the grocery store.
