3 medium tart apples (like Granny Smith), peeled, cored and sliced 1/4 inch thick (approximately 3 c.)
1 c. PLUS 3 T. sugar, divided
1 t. cinnamon
2/3 c. butter
4 eggs
1 t. vanilla
2 c. flour
1/8 t. salt

Directions:
In a bowl, combine the apples, 3 tablespoons of sugar and the cinnamon; let stand for 1 hour. In a mixing bowl, cream butter and remaining sugar (1 cup). Add eggs, one at a time, beating well after each. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth. Pour into a greased 9" x 5" x 3" loaf pan. Push apple slices vertically into batter, placing them close together. Bake at 300º for 1 hour and 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan.
