Ingredients:
Eggs - as many as you want
Water - about an inch high in your pot

Directions:
Directions:
You'll need a steamer basket or some sort of rack to keep the eggs out of the water (a little water touching the eggs is ok).
Ideally you will want to have just one layer of eggs, so using a large pot is best for a dozen.
Set the steamer basket inside and fill the pot to about 1 inch of water. Boil over high heat.
Once you have lots of steam, carefully place the eggs on steamer basket, cover the pot and reduce the heat to low. Let the eggs steam for 15 minutes. Remove the pot from the heat and carefully place the eggs in a bowl of cold water (ice bath).
Allow the eggs to cool enough for you to handle – you can peel them immediately or whenever you are ready to eat them. Store in the refrigerator.

Personal Notes:
Personal Notes:
The ice bath causes the steam trapped inside the egg shell to quickly cool into liquid, which takes up less volume. This reduces the flat part of the cooked egg.

To peel the eggs, thoroughly crack and roll the cooked egg on the counter or table. You will notice the shell falling away from the egg.
