4 ½ c sugar
1 c cornstarch
2 tsp cinnamon
¼ tsp nutmeg
1sp salt
3 tbsp of lemon juice
2-3 drops of yellow food coloring
2 tsp of salt
5-6 cups of apples (peeled cored and diced)

Directions:
Directions:
1. Blend first five ingredients
2. Add 10 cups of water
3. Cook until thick and bubbly
4. Add lemon juice and food coloring
5. Pack apples into a jar leaving 1 inch
6. Fill syrup leaving ½ inch
7. Get out air bubbles and distribute

Place in Water bath with water covering the Jars. Process
20 minutes: quarts 15 minutes: pints
Yield: 6 quarts

Place in pie crust lined pie and bake
400° for 50 minutes for pie

Cassandra loves this so much the last time I made it there was some left and it was still warm. I caught her eating it straight our of the bowl and she asked me if she could have some more "apple soup."
