One 9-inch pie shell
2 cups milk
1 T. butter
3 eggs
1 cup sugar
1 cup grated coconut
2 T. flour
3 T. sugar

Directions:
Directions:
1. Scald milk, then add butter.
2. Separate eggs and reserve whites for meringue.
3. Combine egg yolks, sugar, and flour. Mix thoroughly.
4. Add coconut.
5. Slowly add coconut mixture to milk.
6. Pour into pie shell and bake in hot oven (450º) about 20 minutes.
7. While pie is in the oven, beat egg whites with 1T. sugar until stiff and sugar is dissolved. This makes your meringue.
8. Spoon meringue on top of baked pie,
9. Turn down oven to 350º and bake about 15 minutes or until meringue is golden brown. Watch closely so meringue will not burn!
