1 chicken cut up, or breasts only (skin removed)
2 large onions finely chopped
2 tablespoons oil
1 to 1½ teaspoons salt
2 teaspoons paprika
¼ cup water
½ cup water
1 tablespoon chicken base
1 cup rice
2¼ cups water

Salt the chicken pieces and set aside. Fry the onions in oil until light brown. Remove from heat, add the paprika and stir. Set aside 2 tablespoons of this mixture. Combine the chicken, onion mixture and ¼ cup water. Simmer slowly 40 to 50 minutes until tender.

For the rice, put the set aside tablespoons of fried onions in a separate pot. Add the ½ cup water and chicken base. Simmer for 2 minutes. Then add the rice and the remaining 2¼ cups water. Add 1 teaspoon salt and stir. Cover with a lid and simmer on low for 30 to 40 minutes.

This is a Rieck family favourite. The Riecks use white meat only. It is more flavourful to use a combination of both white and dark meat.
