1/2 bushel apples (preferred Roman Beauty, for thicker mixture)

3 tablespoons slightly heaped ground cinnamon
2 teaspoons apple-pie spice
2 teaspoons allspice
1/2 teaspoon cloves
2 level teaspoons nutmeg
1 teaspoon salt
3-4 pounds of sugar
12 oz bad red hots (cinnamon candy)

Peel, quarter and cook apples. Use only enough water to keep them from sticking, to much water can cause apple butter to be to thin.Then run them through a colander, while still warm.

Stir all the spices well in with apples, add sugar slowly, stirring well. Then add 12 ounces of red hots candy. Continue stirring over medium heat until candy is melted. The candy serves three purposes: color, extra flavor and when the candy is melted the apple butter is ready to can.

NOTE: This is a thick apple butter full of flavor. Ingredients can be altered for your desired taste.
