5 T. butter
2 T. flour
1 c. milk
1/4 t. salt
Dash of pepper
3 egg yolks, slightly beaten
5 t. lemon juice

Directions:
Directions:
Make a "roux" (French for white sauce): melt 2 T. butter over low heat. Add flour and stir well - will be thick. Add milk slowly, stirring constantly. Cook until thick and smooth, stirring constantly or very, very often so it doesn't burn. Add salt and pepper.

Stir part of hot white sauce with the egg yolks (this is "incorporating" and will allow the egg yolks to be slowly warmed up and part of the sauce without cooking into hard separate chunks if added directly to the hot white sauce). Add the incorporated eggs into the rest of the white sauce and stir well. Add additional 3 T. butter, one at a time, and the lemon juice. Stir well.

Pour over asparagus or broccoli, etc.
