** Amount of ingredients depends on size of dish used to make - adjust accordingly **

Potatoes - peeled and sliced paper thin
Butter or margarine
Salt & pepper to taste
Onions - diced small, don't use too many
Colby or Cheddar cheese - shredded
Mozzarella cheese - shredded
1/4 c. flour
3/4 c. milk
Milk - more added as needed per directions

Into a greased dish, slice a layer of potatoes. Add a few small chunks of butter; salt and pepper to taste. Add a thin layer of diced onions and a thin layer of both types of cheese. Repeat steps until the dish is almost full. Top with a layer of yellow cheese.

Mix flour and 3/4 c. milk together and pour over potatoes. Add more milk until almost covered. Cover and bake at 350º for at least one hour or until the potatoes are done - probably 90 minutes. Can put in microwave (covered and turntable off) to finish the potatoes if not done on time.

**TIPS**
DO NOT put too many potatoes into the dish - the potatoes won't cook all the way through and the milk will boil over.
DO make sure to add enough cheese - yellow gives it flavor and color - the mozzarella makes it stringy (like pizza).

This recipe is easily adaptable to a larger than normal size casserole dish to a large 9" x 13" baking pan or bigger. The bigger the pan, increase the flour and milk combination.
