4 boneless, skinless chicken breasts
1 cup salsa
1 can condensed cream of chicken soup
1 packet taco seasoning (or equal amount of Penzey's Taco Seasoning)

Directions:
Place chicken in the bottom of your slow cooker. Sprinkle taco seasoning on chicken. In a bowl, combine soup and salsa. Pour over chicken. Cook on high 4 hours (note: with less chicken breasts, sometimes it is done in 3 hours so I always check then so I don't overcook it). Pull chicken breast out into a bowl, and shred the chicken with two forks. Stir in leftover sauce as desired.

This makes a great seasoned chicken that you can use in soft tacos, burritos, quesadillas, enchiladas, nachos, salads, dips, etc. Really, this dish is limited only by your imagination!

To Make Enchiladas:

First spread Red Enchilada Sauce to coat the bottom of your glass pan. Take the chicken and roll up in tortillas (we like Taco size). Place side by side tightly in pan. Spread more enchilada sauce so the tortillas are coated and stay moist. Cover with shredded Mexican blend cheese. Bake until cheese on top is melted and dish is heated up.

Beware - 4 chicken breasts makes chicken for days - DAYS we tell you! Even you will get tired of delicious Mexican food by day 5, which would be a travesty, so you might want to half the recipe. But when I do, I still keep the same sauce amounts to ensure chicken stays juicy.
