2 lbs. boneless, skinless chicken breast
1 c. salsa, homemade or store bought
1 c. low sodium petite diced canned tomatoes
2 Tbsp. taco seasoning
1 c. onions, diced fine
1/2 c. celery, diced fine
1/2 c. carrots, shredded, optional
3 Tbsp. reduced fat sour cream

Directions:
Directions:
Place the chicken in a slow cooker. Sprinkle taco seasoning over meat then layer the vegetables and salsa on top. Pour 1/2 c. water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches internal temp of 165º. When ready serve, break up chicken with two forks then stir in the sour cream.

Ingredients for halved recipe: 16 oz. boneless, skinless chicken breast, 1/2 c. salsa, 1/2 c. petite diced tomatoes, 1 Tbsp. taco seasoning, 1/2 c. fine diced onion, 1/4 c. fine diced celery, 1/4 c. shredded carrots (optional), 1 1/2 Tbsp. reduced fat sour cream. Prepare as directed.
