1 lb. ground beef, browned (or ground turkey, chicken, pork)
1 pkg. taco seasoning
1 medium chopped onion
4 c. Mexican blend cheese, shredded
2 small cans Enchilada Sauce MILD
12 - 19 corn tortillas (taco size)
1/4 c. milk in a dish large enough to dip tortillas
oil, enough to coat pan

Directions:
Directions:
Preheat oven to 325º. Lightly coat 2 qt. casserole dish with cooking spray.

Prepare tortillas one at a time, as you go: heat in lightly oiled pan for 5-10 seconded on each side then dip in milk.

Assemble in order:
spread just enough enchilada sauce to cover bottom of dish, place about 4 prepared tortillas to cover sauce, then add enough meat to cover, than sprinkle onion, cheese. Repeat process ending with a layer of cheese on top.

Bake 30 minutes or until heated through and cheese is melted . OR Freeze now covered then, thaw and bake
