Smoked Turkey &Wild Rice Soup Recipe

Ingredients: 2 cups smoked turkey or chicken diced 3 boxes of low sodium chicken stock 1/2 tablespoon liquid smoke 2 red peppers 2 ribs celery 2 carrots 2 onions 2 C. wild rice 1 stick unsalted butter 4 tablespoons all-purpose flour 1 teaspoon white pepper ground 2 cups half-and-half Salt

Directions: For the stock: In a heavy pot reduce the stock by 50% and add the liquid smoke. Set aside.
For the soup: Roast the red peppers. Place the peppers under the broiler until the skins become charred. Then place the peppers in a container and cover with a lid. Sweat the peppers until the skin peels off easily. Remove the skin and seeds. Dice the peppers, celery, carrots and onions. Set aside.
Cook the wild rice in 8 cups lightly salted water for approximately 1 hour. Drain and set aside.
To assemble, melt the butter in large pot. Add the diced carrots, celery and onions. Cook for 10 minutes or until tender. Add the flour and cook another 3 minutes. Do not brown the flower. Add the stock and simmer about 15 minutes. Place in a blender and puree the vegetables or use hand blender in the pot itself. Put the puree back into the pot and add the diced turkey, roasted peppers and rice. Stir in the half-and-half. Salt and pepper to taste. Bring up heat to serving temperature over medium heat.
Serve while hot.
