1 Sponge Cake
1 jar Jam of choice (Strawberry, Raspberry or Blackberry)
1/2 c. Sherry
2 c. Birds Custard
2 c. Milk
1/2 pt. Whipping Cream, whipped
2-3 c. Berries-Strawberries, Raspberries or Blackberries

Split sponge cake into 1 1/2" layers, spread each layer with jam. Reassemble and cut into cubes. Place in a glass bowl and dampen with 1/4 cup of the sherry.

Prep custard and fold in remaining sherry. Fold a quarter of the whipped cream into the custard mixture. Pour over cake. Top with the berries, reserving some for garnish. Top with remaining whipped cream. Garnish with berries. Drizzle a bit of sherry on top, if desired. Chill several hours.
