1 cup sugar
/2 cup butter
1 beaten egg
1/2 cup sour cream or yogurt ( plain or vanilla) or 1 tsp. vinegar in 1/2 cup milk & wait 5 minutes
2 cup flour
1 tsp. baking powder
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
2 or 3 ripe bananas, mashed ( can be over-ripe bananas)

Directions:
Directions:
Blend the sugar & butter together on low mixer speed. Add the egg & mix till fluffy. Put in 1 cup flour and add the sour cream and mix. Add the other dry ingredients. Stir in the mashed bananas gently.
Bake in buttered or coconut oiled regular loaf pan or a 10" pie plate.
Bake at 325º for1 hour

Make add 1/2 cup Craisins or broken pecan pieces.
