1 lb. Italian or pork sausage
1/2 lb. Mozzarella cheese - grated
1/2 cup minced onion
1 - 8 oz. can tomato sauce
1 - 6 oz. can tomato paste
1 tsp. salt
1/4 tsp. oregano
1/8 tsp. garlic salt
1/8 tsp. pepper
Grated parmesan cheese, finely cut parsley or
sliced mushrooms if desired.

CRUST
1/2 pkg. dry yeast
1/4 cup warm water
1/2 tsp. sugar
1 tsp. salt
1 T. soft lard
1 cup warm water
3 cups flour

Soak the yeast in 1/4 cup warm water for 5 minutes. Combine the rest of the crust ingredients in a bowl and beat for 2 minutes at medium speed with mixer. Turn dough out onto a floured board, divide the dough in half for 2 10" - 15" pizza pans. Knead each dough half into a smooth ball, roll the dough to paper thin to fit the pan. Put dough on greased pan and make rim to hold the filling. Brush dough with olive oil and arrange filling.

Brown the sausage until pink color disappears, drain well.
Sauté onions, add the tomato sauce and paste and spices.
Put 1/2 the cheese on the dough and cover with the tomato mix, top with sausage and the remaining cheese.

Bake the pizza's at 425º for 25 - 35 minutes or until filling is bubbly and crust is brown
