whole perch or perch fillets
coarse salt
pickling spice

Brine:
4 c vinegar
1 c water
6 tbsp white sugar

Directions:
Directions:
Alternate layers of fish and coarse salt in a container. Let stand in the fridge for 3 days. Drain and wash well. Put into sterilized quart jars adding 1/4 tsp pickling spice to each jar.
For the brine:
Mix all ingredients in a saucepan and bring to a boil. Pour boiling brine into quart jars over fish. Wipe tops and put on lids. Let stand in the fridge for 3 days.
