3 ripe bananas (or 4 if desired)
1-3/4 cup flour
1-1/4 tsp. baking powder
1/2 tsp. baking soda
2/3 cup sugar
1/3 cup shortening/butter
2 eggs
2 tbsp. milk
~1/4 cup walnuts (to taste, or omit)

Directions:

Preheat oven to 350 F. Peel and mash bananas, set aside. With mixer, beat sugar and shortening together. Add bananas, eggs and milk. Then add the dry ingredients. Fold in nuts (if desired). Grease 8 x 4 x 2 loaf pan. Bake 55 minutes (or until dry in center). Let cool 20 minutes before cutting.

Can try this with a little cinnamon or vanilla too...
