1 lb. of red beans
1 lb. of link sausage, chopped
1 onion, chopped
2 sections of garlic, finely chopped
1 cup of celery
1 lg. bay leaf
1 tablespoon of salt and 1 teaspoon of pepper to taste
2 teaspoons of cumin
2 teaspoons of crushed red pepper
2 teaspoons of cayenne pepper, which is optional
4 cups of chicken broth and 4 cups of water
4 cups of cooked white rice

Here is a tip: To make your bean and rice dish more interesting, be creative and experiment with different sausages found in most supermarkets, like chicken and apple or mango with jalapeño. This will give you a new taste twist over the basic beef or pork sausage choices.

Put the beans in a pot of water to rinse. Remove any bad beans that float to top. Drain the water off and put the beans in a deep pot with 4 cups of chicken broth and 4 cups of water. Bring to a boil for 2-3 minutes. Remove from the heat, cover and let set for 2 hours. Then put back on heat at moderate to slow boil. Sauté the onion in oil, with the garlic and celery. Add the sausage to the sauté. Then add the entire sauté mixture to beans. Add the bay leaf and the spices to entire mixture: salt, pepper, cumin, red pepper and cayenne pepper. Simmer stirring occasionally, for 2-3 hours, until tender and squishy. Serve the hot beans and sausage mixture over rice. I like it all mixed together, but try it both ways.
