Dijon Mustard

Vegetable Oil
3 Pears
1 Red Onion
Arugula (7- 8 ounces)
1 log of goat cheese

Directions:
Directions:
In a small bowl, whisk together 9 tbsp balsamic vinegar, 4 ½ tbsp pure maple syrup, 1 ½ tsp dijon mustard, 3/4 tsp salt, and 1/4 tsp pepper. This is the dressing. Wash 3 pears, cut into quarters lengthwise, cut out cores, and cut quarters lengthwise into thin slices. Peel red onion and cut into half moons. Once pan/skillet is well heated, add 3 tsp vegetable oil and swirl to coat bottom. Add pear and onion slices. Cook until lightly browned and tender, 5-6
minutes per side. Then transfer to a salad bowl and combine with arugula, dressing, and crumbled goat cheese.
