1 c. soft bread crumbs
1/2 c. beef broth
1 egg, beaten
4 t. dried minced onion
1 . salt
1/4 t. Italian seasoning
1/4 t. pepper
1 1/2 lbs. ground beef

4 c. frozen shredded hash browns, thawed and warmed slightly in the microwave
1/3 c. Parmesan cheese
1/4 c. minced fresh parsley or 1 t. dried parsley
1 t. onion salt

1 can (8 oz.) tomato sauce
1/4 c. beef broth
2 t. mustard
Additional Parmesan cheese

Directions:
Directions:
In a bowl, combine crumbs, broth, egg and seasonings; let stand for 2 minutes. Add the beef and mix well. On a piece of waxed paper, pat meat mixture into a 10 inch square. Combine the warmed hash browns, cheese, parsley and onion salt; spoon over meat. Roll up, jelly-roll style, removing waxed paper as you roll. Pinch edges and ends to seal; place with seam side down in an ungreased shallow baking pan. Bake at 375º for 40 minutes. Combine the tomato sauce, broth and mustard; spoon over loaf. Return loaf to the oven for 10 minutes. Sprinkle with Parmesan.
