2 tsp. oil
1/2 c. white onions
1/2 c. red or green bell peppers, chopped
1 can (14.5 oz) petite diced tomatoes
3 cans (15.5) Bushes, Black Chili Beans, undrained
1/2 tsp. kosher salt
1 1/2 tsps. ground cumin
1 1/2 tsp. chili powder
1 tsp. garlic powder
1 can (8.5 oz.) sweet golden corn, whole kernel, drained
1/4 tsp, chipotle chili pepper, (optional)

*Optional Topping: Shredded Cheddar Cheese, sour cream, fresh diced tomatoes, tortilla strips, and onions

In a saucepan cook onions and peppers in oil for 10-15 minutes over medium heat. Stir in remaining ingredients and bring to a boil. Reduce heat to medium low or low and cover; simmer for 20 minutes stirring every few minutes. Serve with optional toppings as desired.
