1 Boneless pork loins (3 lbs.)
1 1/2 tsp. salt, divided
3/4 tsp. black pepper, divided
1/4 c. olive oil, divided
3 med. apples, sliced
1 1/2 c. unsweetened apple juice
6 med. onions, sliced (about 5 cups)
3 Tbsp. balsamic vinegar
1 1/2 c. frozen pitted dark sweet cherries
1/2 c. cherry juice

Preheat oven to 350º
Sprinkle roast with 1 tsp. salt and 1/2 tsp. black pepper. In an oven proof Dutch oven, heat 2 Tbsp. olive oil over med-high heat and brown roast on all sides. Add apples and apple juice to pan and place in oven for 50-60 minutes or until thermometer reads 145º basting occasionally with pan juices. Meanwhile, in a skillet heat remaining oil over medium heat. Add onions and remaining salt and pepper. Cook for 8-10 minutes or until softened. Reduce heat to med-low heat for 35-40 minutes or until deep golden brown stirring occasionally. Keep warm. Remove roast to a serving platter and tent with foil. Let stand 10 min. Skim fat from pork pan juices then place pan over med-high heat. Add vinegar and cook 1 min. stirring to loosen brown bits. Stir in cherries and juice bring to a boil. Cook for 10-15 min or until reduced to about 1 cup. Serve pork with apples, onions, and cherry glaze.
