2 c. mashed sweet potatoes
1 stick butter
2 eggs, separated
1 c. packed brown sugar
1/4 tsp. salt
2 tsp. pumpkin pie seasoning
1 c. evaporated milk
1/2 c. sugar
1 - 9" unbaked pie crust

Directions:
Directions:
Preheat oven to 400º
In a mixing bowl, combine sweet potatoes, butter, egg yolks, brown sugar, salt, pumpkin pie seasoning, and evaporated milk. Mix together well. Whip egg white and 1/2 c. sugar to foamy. Blend into sweet potato mixture. Pour into pie shell and bake at 400º for 10 minutes. Reduce heat to 350º and bake for 30 minutes or until firm.
