Beef Kidneys
Salt
Oil
1/4 onion
1 stalk celery
Tbsp. Flour
Cup of rice
2 c. water
Salt & Pepper to taste

Directions:
Directions:
Slice kidneys into pieces and cut away white cords of fat (kidneys will have a strong smell). Soak overnight in salt water.
Next day rinse kidneys.
Brown kidneys in oil, onions, and celery until browned like mushrooms (strong smell melts away and leaves a pleasing flavor). Add flour to mixture until mixed and browned. Add water and let simmer for 2 to 3 hours then add rice and let simmer until all is creamy and delicious.
