CRUST
1 stick butter
6 tbsp. brown sugar
1 1/3 c. flour
½ c. chopped walnuts

FILLING
1 ½ lbs. softened cream cheese
½ c. sugar
2 ½ eggs

CHOCOLATE FILLING AND TOPPING
½ lb. semi sweet chocolate
½ c. heavy cream
1 oz. liquid coffee (optional)
1/8 c. sugar
¼ stick butter

CRUST
Blend butter and sugar; add flour and walnuts. Pat into 9” springform pan ¾ the height of the pan. Refrigerate 1 hour or overnight. Prebake 10 minutes at 350 degrees.

FILLING
Beat cream cheese in mixer, slowly adding sugar. Add eggs and continue beating until well incorporated. Add amaretto or vanilla to taste.

CHOCOLATE FILLING AND TOPPING
Melt chocolate and coffee together over low heat; set aside. In another pan, combine cream , sugar and butter; bring to boil for 1 minute. Add hot cream mixture to chocolate; whisk until well blended.

TO ASSEMBLE
Pour half cheese filling into the baked crust. Drip ½ c. chocolate filling over top. Swirl with knife. Pour remaining cheese filling over top. Bake ½ hour at 350 degrees. Then turn down to 300 degrees for additional 15-30 minutes. Cool. Spread remaining chocolate on top of cake, covering entire surface. Sprinkle outer edge with ¼ c. chopped walnuts. Let cheesecake set 1-2 hours, and then refrigerate.
