12 Tbsp. sweet butter
2 1/2 c. finely chopped yellow onions
3 tart apples, cored and chunked; do not peel
1 lb. lightly seasoned sausage (sage is good)
3 c. coarsely crumbled cornbread
3 c. coarsely crumbled whole wheat bread
3 c. coarsely crumbled French bread
2 tsp. dried thyme
1 tsp.dried sage
freshly ground sea salt and black pepper, to taste
1/2 cup chopped Italian parsley

Directions:

1. Melt half of butter in a skillet. Add chopped onions and cook over medium heat, partially covered, until tender and lightly colored, about 25 minutes. Transfer onions and butter to a large mixing bowl.
2. Melt remaining butter in the same skillet. Add apple chunks and cook over high heat until lightly colored but not mushy. Transfer apples and butter to the mixing bowl.
3. Crumble the sausage into the skillet and cook over medium heat, stirring, until lightly browned. Using a slotted spoon, transfer sausage to the bowl and reserve the rendered fat.
4. Add remaining ingredients to the ingredients in the mixing bowl and combine gently.
5. Spoon mixture into a large casserole. Cover and place in middle of a large pan which will hold a bath of water. Pour hot water around the casserole. Bake for about 45 minutes at
325º, basting occasionally with cooking juices from turkey or with rendered fat.

This is Knox and Grace's favorite part of Thanksgiving and Christmas dinner. Especially nice contrast with a smoked turkey and jellied cranberry sauce.
