125g/4oz butter
55g/2oz caster sugar, plus extra to finish
180g/6oz plain flour

Directions:
Directions:
Heat the oven to 190C/375F/Gas 5.
Mix the butter and the sugar together until smooth.
Stir in the flour to get a smooth dough.
Move on to a pre-floured flat surface and gently roll out until the dough is around ½ inch thick.
Cut into rectangles (or any shape depending on your cookie cutter!) and place onto a baking tray. You can also prick them with a fork (not actually sure what this does but I have always done it haha)
Sprinkle with caster sugar and bake in the oven for 15-20 minutes, until pale golden-brown.
Transfer to a wire rack to cool.
