1 Box Whole Wheat Pasta
1 Large Red Pepper
1 Handful Cherry Tomatoes
6 Stalks of Asparagus
1 Handful Mushrooms.
5 tbsp Olive Oil
5 tbsp Balsamic Vinegar
Salt & Pepper to taste/Dash
Handful feta cheese

Directions:

1. Boil water and add pasta
2. In a separate frying pan on low heat add in olive oil, salt & pepper. Cut up all vegetables and throw in vegetables.
3. While the water boils for the pasta let all of the vegetables simmer in the olive oil on low heat for about 10-15 minutes or until soft.
4. When the water for the pasta boils add the pasta
5. While the pasta cooks continue to let the vegetables simmer and sit in the olive oil and now add 2 tbsp of balsamic vinegar. Let the vegetable sit in the balsamic vinegar and soak up all of the goodness.
6. After the pasta is finished cooking let it simmer.
7. After the vegetables are done cooking add to the pasta and add the remaining balsamic vinegar.
8. Top with feta cheese mix and enjoy!
