Crust
2 c. graham cracker crumbs
1/2 c. sugar
1/2 c. melted butter

Mix together and line sides and bottom of 10" springform pan.

Filling
(All ingredients at room temperature)

40 oz. cream cheese
1 3/4 c. sugar
3 tbsp. flour
1/3 tsp. salt
3 tbsp. lemon juice
1 1/2 tsp. vanilla
6 eggs
1/4 c. whipping cream

Directions:
Directions:
Beat cheese til fluffy. Mix sugar, flour, and salt. Gradually blend into cheese, keeping mixture smooth. Add lemon juice, vanilla, and eggs, one at a time.
Stir in 1/4 cup whipping cream. Pour into crust.

Bake in 475º oven for 15 minutes. Reduce to 225º for 1 hour. Turn off oven and let stay in oven for 30 minutes. Once cool, refrigerate for several hours or overnight before serving.

When I had Alex's baptism and party afterward, my good friend brought this wonderful cheesecake for the party. That was 23 years ago and every time I make it I think of that wonderful day with Alex.
