5-8 lb. salmon cleaned, deboned
1 whole lemon, thinly sliced
4 sprigs parsley
4 Tbsp. vegetable oil
1 tsp. salt
1 tsp. fresh ground black pepper

For Garlic Butter:
8 Tbsp. butter
4 cloves garlic crushed
4 tsp. parsley, chopped

Directions:
Directions:
Cream the butter, add the garlic and mix. Chill when combined.
Rinse fish with cold water and pat dry. Open the fish flat and place flat on double thick layer of aluminum foil skin side down. Sprinkle with salt and pepper. Arrange onion, garlic, lemon, and parsley on fish. Drizzle with oil and grill over hot coals. Allow 10 min for each inch of fish. When done remove fish from the skin and cut into pieces. **The skin will stick to the foil.
Serve with garlic butter.
