4 oz. butter
6 tbsp. flour
3 1/2 c. Milk
1 egg beaten
6 tbsp. Parmesan
1 0z. whipped cream
12 oz. Turkey sliced
12 strips of bacon cooked
12 slices of bread
Sliced Tomato (optional)

Directions:
Directions:
Make a roux with the butter and flour. Add milk and cheese, bring to a boil just to dissolve the cheese. Add the egg but do not let it boil so as not to cook the egg. The egg will thicken the sauce. Remove the pot, let stand for a minute or so then fold in the whipping cream.

Arrangement:
In an oven proof dish place the individual slices of bread and cover with the turkey slices.
Pour the cheese sauce over the turkey.
Sprinkle additional cheese over sauce.
Put in oven at 450–º until browned and bubbling.
Remove from oven, plate with cross 2 pieces of bacon. Add sliced tomato Optional

This recipe is from the Camberley Brown Hotel in my hometown of Louisville Ky. It is a rich filling lovely sandwich that holds many fond memories for me and my family. A fond tradition of ours using leftover turkey after Thanksgiving.
