1 1/2 c. warm water
2 1/4 tsp. yeast
2 T. sugar
4 c. flour
2 tsp sea salt
4 T. butter softened
1/4 c. baking soda
2 qt. water
1 egg, lightly beaten with 1 tsp water
pretzel salt to sprinkle on top

In a large mixing bowl combine warm water, yeast and sugar. Let stand 5 minutes or until foamy. Add flour, salt, butter and mix with dough hook until thoroughly combined and pulls away from sides and forms a ball of dough, you may need to add a little more flour 1/2 -1 cup. Cover with a towel and set in a warm place to rise for about an hour or double in size. Punch down dough and turn out onto lightly floured surface. Line 1 baking sheet with parchment paper or foil sprayed lightly with cooking spray. Cut dough into 198 pieces or 9 for larger size rolls. Place each ball on to baking sheet and cover with plastic wrap for 30 minutes or until double in size. Preheat oven to 425º, In a large sauce pan bring baking soda and water to a boil, place each roll in water for 30 seconds to 1 minute return to baking sheet and brush with egg wash and sprinkle with salt. Cut and X pattern into tops of each roll. Bake for 15-20 or until start to brown. Remove from oven and cool. Enjoy.
