6 c cooked shredded pork (see southwest shredded pork)
2 c black beans
1 16-oz can corn, drained
1 1/2 c chunky salsa
2 c ranch dressing
2 avocados
1 bag corn tortilla chips
1 head lettuce
2 c cheese, grated
1 can olives, sliced
2 limes (opt)
cilantro (opt)

Directions:
Directions:
Combine shredded pork, 1 c black beans, corn, and salsa in slow-cooker. Cover and cook 30 minutes on high. Meanwhile, mix ranch dressing with mashed avocado.
For salad: layer pork, remaining black beans, chips, lettuce, cheese, and olives in any order desired. Pour avocado ranch dressing over salad. Squeeze lime and add cilantro (if desired).
