2 1/4 tsp. yeast
1 tsp sugar
1/4 c. warm water
2c. warm buttermilk
1/3 c. honey
1/4 c. butter, melted
1 tsp. salt
3/4 tsp. baking soda
6 c. flour

Directions:
Directions:
Mix sugar, yeast, and water and set aside for five minutes. Mix buttermilk, honey, salt, baking soda in with the yeast mixture. Add three cups flour and mix until smooth. If using and electric mixer it is about 5 minutes on s low speed. Mix in butter until it is totally incorporated into mixture. Begin adding in the rest of the flour one cup at a time, keeping mixer on low speed. When dough pulls away from the sides of the bowl remove it from the bowl to a floured surface and knead until elastic and smooth. Place in a greased bowl, cover and let rise for 1 1/2 hours. Punch down and form into 2 loafs. Place into greased loaf pans and let rise for 45 minutes. Bake at 400º for 30 minutes. Remove from over and brush with butter, let cool 10 minutes before removing from loaf pan. Turn out and cool completely on a rack. Cover loaves if you want soft crusts.
