Ingredients: 2 eggs, beaten 1 small onion, grated 1 tsp salt 1/4 tsp ground nutmeg 1/4 tsp ground pepper 2 packages of Simply Potatoes shredded potatoes 2 tbsp flour 2 tbsp vegetable oil

Directions: |
Directions:Combine eggs, onion, salt, nutmeg, and pepper in a large bowl. Pat shredded potatoes dry with a paper towel. Immediately combine potatoes with egg mixture to prevent discoloration. Sprinkle with flour and mix well. You may need to add more flour if the mix is too watery.
Heat oil in a 10-inch skillet over medium heat. For each pancake spoon out 1/3 cup of the potato mixure (or the size you desire) flatten slightly and carefully place into the hot oil. Cook each pancake about 4-5 minutes on each side or until golden brown. Repeat with the remaining potato mixture. Add more oil if needed. Remove and place on a paper towel over a flat surface. Serve with rueben sandwiches or sausage. |

Notes: I like to make these potato pancakes as a bite size side. It serves alot more people and they are easy to eat. They go great with mini rueben sandwiches made on mini rye bread. Happy Oktoberfest!
