SAUCE:
olive oil
1 onion finely diced
2 garlic cloves, minced
1 red pepper finely diced
2 tablespoons tomato paste
10 oz ketchup
15 oz can of diced tomatoes (I get the flavored ones)
1 tablespoon Worcestershire sauce
dry parsley
salt
black pepper


MEATLOAF:
bread crumbs
ground beef
2 eggs
salt
pepper
garlic powder
onion powder
3-4 slices bacon (I use turkey bacon)

Directions:

SAUCE (You can make the sauce a day or so ahead if you want)
In a skillet add live oil, sauté onions and garlic until translucent
Add the red peppers – cook until soft
Add tomatoes and tomato paste – let simmer
Add parsley, ketchup and Worcestershire sauce
Season with salt and pepper – let simmer for about 5 minutes
Remove from the heat and let cool

Preheat oven to 350

MEATLOAF:
In a large bowl mix the ground beef, bread crumbs, seasonings, eggs and about 1 cup of
the tomato sauce (after you mix everything you might want to add more sauce depending on the size of the meatloaf)

Lightly oil a baking sheet and mold the meatloaf.
Coat the top of the meatloaf with some tomato sauce
Lay the bacon over the tomato sauce and bake for about 1-1/2 hours
Rotate the meatloaf every now and then so it cooks evenly
Serve with the remaining tomato sauce on the side.
