2 1/2 cups flour
1 1/2 cups quick oats
1 teaspoon baking soda
3/4 teaspoon salt
1 3/4 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup butter, softened
1 1/3 cups brown sugar
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 1/4 cups canned pumpkin
1 3/4 cup chocolate chips

Directions:
Directions:
Beat together butter and sugars until creamy. Add egg, then vanilla and pumpkin. Add dry ingredients, and mix until combined. Mix in chocolate chips.

Let batter rest 5 to 10 minutes.

Drop by spoonful onto cookie sheet. Bake at 350º for about 12 minutes.
