1/2 lb. Italian sausage
1/2 lb. hamburger
32 oz. jar spaghetti sauce (or the closest you can find i.e. 29 oz. and add water to jar and shake up to get all sauce from sides of jar).
24 oz. container of cottage cheese
2 eggs, beaten
1/2 t. pepper
1/2 c. Parmesan cheese
2 T. parsley
9 lasagna noodles
1 # (or 4 c.) shredded mozzarella

Brown meat and drain;stir in spaghetti sauce. In a bowl, combine cottage cheese, Parmesan, eggs, pepper and parsley.Stir well.

**Option 1 - baking right away **
Boil noodles and drain. Lay down 3 noodles in a greased 9" x 13" baking pan. Spread 1/3 of the meat mixture over the noodles. Spread 1/3 of the cottage cheese mixture over the sauce layer. Sprinkle 1/3 of the mozzarella on top. Repeat layers 2 more times. Bake at 350º for 30 - 45 minutes. Let stand 10 minutes before cutting.

Option 2 - baking the next day, but making ahead **
Lay 3 UNCOOKED noodles in a greased 9" x 13" baking pan. Spread 1/3 of the meat mixture over the noodles. Spread 1/3 of the cottage cheese mixture over the sauce layer. Sprinkle 1/3 of the mozzarella on top. Repeat layers 2 more times. Take any extra spaghetti sauce, tomato sauce or even water and pour around the outsides and in every nook of the lasagna until liquid reaches top edge of baking pan. Put lid on and refrigerate overnight (at the least - 24 hours even better). Remove from the refrigerator and bake at 350º for 45 minutes. Let stand 10 minutes before cutting.
