2 pounds calamari, cleaned
3 cups vegetable oil
1 1/2 cups flour
Garlic salt to taste
Seasoned salt mix, to taste
1 tablespoon chopped parsley
4 eggs
Extra salt
1 or 2 lemons

Directions:
Calamari can either be cleaned at the market or at home. To clean at home, simply pull out the beak, rinse the calamari and cut it into ringlets. Soak in water in the refrigerator until ready to use. Heat 1 1/2 cups oil in a wok or heavy frying pan. Sift together the flo8ur, garlic salt, the seasoned salt mix and chopped parsley. Combine with the eggs and mix to form a batter. Dredge the calamari ringlets in the batter, and fry a few pieces at a time in the oil until golden brown. When done, remove pieces from the oil and drain on a paper towel. Squeeze lemon over the fresh pieces of calamari. It is important to keep the oil clean, spooning out any bits of batter that may be left floating in the oil.Change the oil at least once. Continue frying dredged calamari until done, keeping the oil clean. Serve with just a little lemon and perhaps a dash more of salt or red cocktail sauce or tartar sauce.
