16 slices veal, pounded thin
1 lb. fresh spinach
1/8 lb. prosciutto ham, sliced very thin
1/4 lb. mozzarella cheese, sliced thin
4-6 tablespoons butter
4 tablespoons flour
2 ox. Parmesan cheese, grated
6 oz. Madeira wine
Directions:
Directions:
Place the veal between two sheets of grease proof paper and pound it flat.
Pass it through the flour and saute it in two tablespoons of melted butter (add more butter if needed), for 2 minutes.Turn the veal and saute it for 2 additional minutes. Add Madeira wine and cook for 1 minutes. Remove pan from heat. Saute the spinach in 2 tablespoons of butter. Place sauteed veal slices in an oven-proof casserole with the Madeira and leftover melted butter from the pan. Place spinach on top of each veal slice and sprinkle lightly with grated Parmesan cheese.Place prosciutto ham on top of the spinach, cover with mozzarella cheese, and, place in oven (pre-heated to to 400 º) for 3 minutes, until heated and cheese is melted. Serve at once.
