Ingredients: 1 lb ground beef or 1 lb boneless skinless chicken breast 1 8oz bag shredded cheese (Mexican blend) 1 can El Pato Red Chile Enchilada Sauce - 28 oz (save a lot) 1 -12 pack flour or corn tortillas Sour cream Optional ingredients 2 T chopped fresh cilantro leaves 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced Jalapeņos Black beans Onions/olives

Directions: Brown ground beef in skillet / bake or pan fry chicken until done Drain beef and mix In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan. Fill each tortilla with a spoonful of ground beef and a little cheese (Black beans, onions, and/or olives can be put inside each enchilada at this time, if desired) Roll tortilla and place seam side down in pan. Continue with remaining tortillas. Pour remaining enchilada sauce over tortillas and top with cheese At this time, pan may be refrigerated for several hours or overnight. Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated). Top with sour cream. Add Optional ingredients fresh cilantro leaves avocado diced tomatoes jalapeņos if desired

Notes: Our children and friends love these. El pato sauce is inexpensive and the best I've found, it does have minced onions, but it is easily strained, which we often do for 1/2 the pan.
