4 1/4 to 4 3/4 c. flour
2 1/4 tsp yeast
1 c. milk
1/3 c. sugar
1/3 c. butter
3/4 tsp. salt
2 eggs

Directions:
In a large mixing bowl stir together 2 cups of the flour and the yeast. In a medium saucepan heat and stir milk, sugar, butter and salt just till warm (120º to 130º) and butter almost melts. Add milk mixture to dry mixture along with the eggs. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl. Beat on high for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can. Turn dough out into a lightly floured surface and knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes). Shape into a ball and place in to a lightly greased bowl. Cover and let rise till double in size (about 1 hour). Punch down and turn out onto a lightly floured surface. Divide into half, cover and let rise 10 minutes. Lightly grease a cookie sheet. Divide each dough portion into 16 pieces and roll each piece into a 12 inch long rope. Tie a loose knot leaving 2 long ends. Tuck top end under roll and bring bottom end up and tuck into center of the roll. Place 2 to 3 inches apart on prepared baking sheet. Bake at 375º for 12 minutes or till golden brown. Immediately remove rolls from pan and let cool.
