2 large ripe avocados
8 oz. +70% dark chocolate, chopped
3 tbsp. butter
1 cup or less sugar
2 eggs
1 tsp. vanilla extract
½ cup white flour
¼ cup whole wheat flour
¼ cup unsweetened cocoa powder
½ tsp. baking powder
½ tsp. salt
½ cup chopped walnuts

Preheat oven to 350º. Grease and flour an 8"x8" baking pan. Place butter and chopped chocolate in a medium heatproof bowl. Place the bowl over a pot of barely simmering water. Stir chocolate and butter until melted. Remove bowl from heat.

In a large bowl, mash avocado until very smooth. Stir in chocolate mixture. Whisk in sugar, then add eggs one at a time, then add vanilla. Sift in cocoa powder, flours, baking powder and salt, mixing until just combined. Do Not Over Mix. Fold in walnuts. Spread the batter into the prepared pan and smooth with a spatula. Bake for 28 - 30 minutes until the middle is set. Let cool and cut using a sharp knife.
