2 tbsp. butter
3 tbsp. flour
1 cup chicken broth
1/2 lb. cold cooked veal, finely chopped
1 tbsp. finely chopped parsley
1 tsp. nutmeg
1 tsp. Worcestershire sauce
1/8 tsp. freshly ground black pepper
2 egg whites
1/2 cup fine dry bread crumbs
oil for deep frying
prepared mustard Dijon type

Heat butter in saucepan. Add flour and cook for 2 minutes, stirring constantly. Gradually add broth, stirring constantly until a thick paste is formed. Add veal, parsley, nutmeg, Worcestershire sauce and pepper. Combine thoroughly. Refrigerate mixture for 2 hours. Heat oil in deep fryer. Form meat mixture into 1 inch balls. Beat egg whites until foamy. Dip balls in egg whites, then roll in bread crumbs. Fry in oil for 2 minutes or until golden brown. Serve with Dijon mustard for dipping.
