Meatballs:

2 lbs. hamburger
1 egg
bread crumbs (you can use Rusk from holland)
hamburger seasoning (found Dutch spice in Ripon)
salt
If cannot find dutch spice use mixed spices: pepper, coriander, nutmeg, ginger, cornstarch, bouillion powder

Soup:
2 pkgs. Honig Groeten (Vegetable) Soup Mix
Water as directed
Vermicelli

Homemade recipe:
1/2 lb. stewing beef
8 cups water
2 beef bouillon cubes
4 stalks of celery, diced
4 carrots, diced
2 onions, minced
1/2 cup small caulifower flowerets
2 tomatoes, peeled and diced
1/4 cup uncooked rice
2 small bay leaves
1/4 cup bread crumbs
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. nutmeg

Use Maggi to season the soup as desired.

Meatballs:
Mix ingredients together and form very small meatballs. Put on a cookie sheet and bake at 300 degrees for 30 minutes. Drain fat and set aside.

Soup:
Mix 2 packages of Honig Groente Soup Mix with suggested water amount from package directions in a crock pot. Add meatballs. You can also add extra vermicelli to the soup.

Homemade soup:
Cook stewing beef in bouillon flavored water until tender. Remove beef from water and add vegetables, rice, bay leaf and parsley flakes. Simmer until vegetables are tender. Make meatballs and add to soup along with stewing meat cut up in small pieces. Add salt and pepper to taste.

Oma always served this on Christmas with dinner rolls with thinly sliced ham and butter or mayonnaise (brojies) ! One of my husbands favorite soups.
