2 cakes yeast
1-1/4 cups warm water
4 cups flour
1 pound butter
2 tbsp sugar

Directions:
Directions:
Dissolve yeast in warm water with sugar. Sift flour in large bowl, crumble in butter. Quickly add to yeast water. Let rise in warm place until double in bulk. Push down and let rise again. Start rolling pencil thin strips in sugar. (work quickly) Place on greased cookie sheet, in U shape let rise about 5-10 minutes. Bake about 15 minutes at 400 degrees. When done glaze under broiler for a few minutes.

These are the best cookies, they take a long time to make but so worth it. I was able to buy some in Italy and this recipe is very close. You want to bake them so they are crips but do not over cook them.
