2 8-inch flour tortillas
1/2 lb. bulk sausage
1 4-oz. can chopped green chiles
1 c. grated sharp cheddar cheese

Directions:
Directions:
Preheat oven to 350º F.
In a small skillet, break up and sauté sausage until it is no longer pink. Drain.
Spray cookie sheet with nonstick spray and place tortillas on it.
Divide sausage and chiles between tortillas. Top with shredded cheese.
Bake for about 10 minutes until cheese is bubbly.
Cut into wedges with a pizza cutter and serve.

This recipe is adapted from the "Burrell Tortilla" in the Rancho de Chimayo Cookbook. We learned about it from Jack Crowell, in Los Alamos, in the late 1970s.
