1 C butter
1 C sugar
2 eggs
1 tsp. vanilla
1 Tbs. baking powder
1 tsp. salt
3 C flour

Directions:
Directions:
Preheat oven to 400°
Cream together first 4 ingredients. Add dry ingredients (add flour 1 cup at a time). Dough should be stiff. Turn out on floured surface. Don’t knead the dough, just lightly shape, then pat or roll out to ¼ inch thickness, dusting with flour as necessary. Use biscuit cutter or drinking glass to cut into round shapes. Sprinkle tops of cookie with sugar. Bake on ungreased cookie sheet just 8 minutes - -10 minutes max. Cookies should be light and puffy and barely browned on bottom. Watch baking time carefully, it is easy to overbake this cookie.
