2 c hot water
1/2 c oil (olive or canola)
1/3 c sugar
2 tsp salt
1/2 c cold water
1.5 T active dry yeast
6 c flour (can use part whole wheat if desired)
2 eggs

Directions:
Directions:
In a large bowl stir oil into hot water. (I use my stand mixer). Mix in sugar and salt. Add cold water and yeast. Let sit for a couple of minutes, then stir to dissolve yeast. Add 3 cups of flour, and mix in. Mix in eggs. Switch to dough hook if you have one.

Add remaining flour, 1 cup at a time, and beat for several minutes to develop the gluten. Turn out on a floured surface and knead a bit more until dough is smooth and elastic. Please in a large greased bowl to rise in a warm place away from drafts. (I use my oven). When double in size, about 45 min to an hour, punch down and shape into buns. Using a silicone baking mat works the best, no mess no need to grease pans, and no sticking. Raise again to double in size, and bake at 325 º F until golden brown, about 20 - 30 minutes depending on your oven.

Remove from oven and tip off the pans. Cool on baking rack. Brush tops with oil or butter if desired.
